Get startedIt’s one of the tastiest days of the year - Pancake Day! If you’re looking for an easy-to-make yet delicious vegan pancake recipe then you’ve come to the right article. The recipe is simple enough so that the kids can help out in the kitchen and the whole family is sure to want seconds!
Why do we have Pancake Day?
Pancake Day, also known as Pancake Tuesday and Shrove Tuesday, is the traditional feast day before Lent starts on Ash Wednesday. Traditionally on this day, people try to use up their rich foods such as eggs, milk and sugar before the fasting period begins - this is where pancakes come in! However, even if you or your family don’t eat eggs or milk you can still most definitely celebrate this holiday and whip up some delicious pancakes.
When is Pancake Day?
The date for Pancake Day changes every year depending on when Easter is. It can fall on any date between the 3rd February and 9th March:
- 16th February 2021
- 1st March 2022
- 21st February 2023
- 13th February 2024
- 4th March 2025
Ingredients:
Dry ingredients -
- ½ cup + 1 tbsp of (spelt) flour
- 1 tsp baking powder
- 2 tbsp raw sugar
Wet ingredients -
- ⅓ cup of plant milk + 2 tbsp (we used oat milk)
- 1 tsp of apple cider vinegar
- 3 tbsp of applesauce
- ½ tsp of vanilla extract (optional)
Method:
Step 1 - Add all the dry ingredients into a bowl and mix. You can add more or less sugar depending on how sweet you’d like your pancakes to be.
Step 2 - Add all the wet ingredients into another bowl and mix.
Step 3 - Now pour the wet ingredients into the dry bowl and mix together. Add in 2 more tbsp of plant milk to get a smoother consistency.
Step 4 - Preheat a lightly greased or non-stick pan to medium-high heat (we used coconut oil).
Step 5 - Then add in a ¼ cup of the pancake batter to make each pancake.
Step 6 - Once the pancakes start to bubble on the top you can flip it over to the other side. It should take roughly 3 minutes for each side.
Step 7 - Now it’s time to decorate the pancakes with your favourite toppings and serve!
Pancake topping ideas:
Let your kids get creative and have them decorate the pancakes to suit their own personal taste. They can even cut the pancakes and toppings to create some smiley faces! Here’s a list of pancake toppings to give you some inspiration:
- Agave syrup
- Maple syrup
- Vegan yoghurt
- Vegan chocolate spread
- Vegan chocolate chips
- Fruit (i.e. bananas, blueberries, strawberries, raspberries, etc.)
- Lemon and sugar
- Fruit compote
- Jams
- Peanut butter, almond butter, etc.
- Nuts (i.e. almonds, hazelnuts, walnuts, etc.)
- Vegan ice cream
- Chia seeds
